Peru is a relatively late comer when compared to the 'old-guards' coffee producers of Latin America. A lot of Peru's coffee production is small scale; farmed and harvest by smallholders and sold collectively. Peru also produces a relative amount of Organic certified coffee and yet, to some degree, it can be hard to find consistently high quality and good tasting Peruvian coffee.

This could be due to a majority of volume being sold for cheaper. There's a recognition that Peruvian coffee is delicious, and one of the more affordable in terms of Organic certified. As such, there's typically high demand, and a vast majority of such coffee may be found months old on the retail shelf. 

But this coffee is one of the exception. This coffee is a good example of the delicate yet complex flavours found in high quality Peruvian coffee. Incredibly well balanced, this coffee is easy to drink, and packing flavours.

Produced by La Union, it is managed by two producers, Martin and Segundo. who in turn work with numerous smaller farms in the region. There's a lot of care and attention being paid in the entire process - from training and educating the farmers on new farming and processing techniques, to extensive cupping and singling out the finest of lots.

This is a fully-washed coffee, starting off with careful handpicking of ripe cherries. The coffee is then depulped, and undergoes fermentation in a wet fermentation tank for up to 36 hours. The coffee is then washed and dried on raised beds to improve air circulation.
