Coffee Pork Ribs (Recipe)

Perfect for a Sunday afternoon brunch with family and loved ones. Best paired with a cup of bright, tart, and nutty Prosperoo from Hook (which will be leaving our coffee menu at the end of the month!) We haven't gotten down to experimenting with every Coffee Pork Ribs recipe there is out there but we're most inclined to this one by The Meat Men simply because of how mouthwatering their video is. Ingredients

500g pork ribs
-
½ tsp salt
-
½ tsp sugar
-
2 tbsp oyster sauce
-
1 tsp sesame oil
-
½ tsp bicarbonate of soda
-
2 tbsp rice flour
-
2 tbsp potato starch
-
3 tbsp water
-
Oil for deep-frying
Sauce
-
32g of freshly roasted coffee, ground super fine (The Meat Men used instant coffee because it dissolves in water but if you'd like a more aromatic and flavoursome dish and are okay with a grainier sauce, freshly roasted coffee is always better)

1 tbsp brown sugar

1 tbsp sugar
-
1 tbsp minced garlic
-
2 tbsp Worcestershire sauce

1 tbsp rice wine
-
1 tbsp dark soy sauce
-
3 tbsp water
Instructions
- Cut 500g pork ribs into strips
- Add
- ½ tsp salt
-
½ tsp sugar,
-
2 tbsp oyster sauce,
-
1 tsp sesame oil,
-
½ tsp bicarbonate of soda,

2 tbsp rice flour,
-
2 tbsp potato star
-
3 tbsp water,
-
1 egg (beaten)
- Mix well and let it marinate for 1 hour
- For coffee sauce mix in a bowl
- 2 packets instant coffee
- 1 tbsp brown sugar
- 1 tbsp sugar (adjust to taste)
- 1 tbsp minced garlic
- 1 tbsp rice wine (optional)
- 2 tbsp Worcestershire sauce
- 1 tbsp dark soy sauce
- 3 tbsp water

Mix well and set aside

Heat sufficient oil in a wok, deep-fry pork ribs till golden brown

Drain and set aside

Add coffee sauce mixture to a pan
-
Cook until it thickens
-
Add pork ribs, toss and let sauce coat evenly

Garnish with chopped chilli padis and fresh coriander
